I'm excited about Quickstart, but would like to have some more direction about how to deploy this, not as a virtual instance on my desktop but on a server. I'm particularly interested in seeing how to move a customized instance over from my VirtualBox over to EC2.

Run QuickStart install scripts on EC2 Ubuntu instance
Whar about just running the QuickStart install scripts on a Ubuntu Amazon Machine?
I use VMware, so I just create my QuickStart environments by running the sh install scripts after I install ubuntu. It's pretty fast. You can just roll back the instance if you have any problems.
Just keep in mind that QuickStart is a LOCAL development VM which is not setup for security on the net.
However, changing passwords and some config settings can make it secure. Just make sure you know what you are doing.

git clone --branch master http://git.drupal.org/project/quickstart.gitcd quickstart
You'll find all the install scripts, including the make files which make installing new instances of Drupal really easy.
