Because many people will be away, I am not organizing an August meetup for central NJ. Obviously, anyone who feels so motivated can organize one.
For September I plan to pick a date for a meetup that will be the week after Drupalcon Paris. Obviously we will want some time to discuss developments at Drupalcon, but we could potentially have another focus as well. Please comment if you have suggestions or are willing to present something.

I can do something on
I can do something on hands-on themeing (overrides, sub-themes, views, etc.,) multi-site setups, server configs, or site recipes. I can do some module development too, but I'm sure Peter is better at it then I am.
I'm wondering if the last presentation had some confusing parts to people who are newbies, so demonstrating some of the things discussed in the presentation would probably be helpful.

I think a presentation on building (and exporting/importing) Views in Drupal 6 plus some basic theming of Views would be a well-received topic.
I'm gotten several requests for a hands-on session on using revision control tools like subversion.
