I am a web administrator for a Defense Department contractor. Don't do Drupal there.
I am starting to use Drupal for a number of web sites, and am in the process of converting my wife's business site from a site generator to Drupal + Ubercart.

Recommend Using Drupal
You should pick up a copy of Using Drupal, http://drupal.org/node/333901 - it has a whole chapter dedicated to Ubercart. I just completed an e-commerce site using Drupal 5 and Ubercart -- http://www.oogliebooglie.com . This was my first Ubercart project. Before that I worked on the redesign of http://pilotonline.com . I can tell you that Ubercart definitely has some fantastic features , but like a lot of things in Drupal it takes some getting used to.
As a side note -- I too work for the DOD and have been trying to convince them to switch to Drupal, but you know how that story ends.
