Personally, I'd be for having a buffet where I can combine different vegetables, however in the end this will probably turn out quite difficult logistically speaking: risks of having some of the food ignored while there is too few of others.
Realistically, I guess we'll have to settle for vegetarian options (I'm all for salads!!) delivered by the caterer with a couple additional fruits or fresh vegetables (I love having a couple carrots as a casual snack).

I am very much in favour of a Vegetarian-friendly DIY style buffet.
(Although my first choice would be a chef line where you can have them custom whip you up something, but that may be slightly unmanageable depending on attendance numbers...)

This sounds a bit crazy, but if you are worried about some food being left over form the buffet, we could push this whole crowdsourcing/Web 2.0 thing the whole way: show the menus and have people vote their favourite food online...
Migh be difficult to know without having tasted, though.

the benefit of individual box lunches is that the food is measured. a buffet requires excess.
taking the last boxed lunch vs. taking the last pieces of food on a buffet: my feelings would be very different in these cases.
caterers are professionals. i'm sure they have formulas. nonetheless, i am superstitious.
In Szeged the lunch buffet
In Szeged the lunch buffet seemed to work pretty well (except for some very mysterious sandwich topping combinations). Given the thousands of plastic cartons sent to the landfill at DCDC, I'm not sure which mode is more wasteful.
I missed vegetables in both
I missed vegetables in both Szeged and Washington. Szeged had salads but most of them with mysterious mayonnaise. Considering how great food France has, please include something local, lots of vegetables, some meat, baguettes and everyone should be happy.

I like the idea of vegetarian-friendly DIY style buffet, but I realize it could be too difficult.
In a buffet, all the best things will disappear first ;]
So, do what is most affordable.
I'll be happy with anything but red meat and shellfish (and mysterious mayonnaise), I'm sure there will be something good.
And I've heard there are some good restaurants in Paris.

Please remember those of us who like to help save our planet by not eating any anymal products. With salads it would help to leave the dressing and cheese out and let everyone add what he or she likes. It would also help to clearly mark vegan items.

One of the things we hear so much about in regards to French food is the fantastic cheeses. It's one of the things I'm most looking forward to. Also, French wine. So...how about it? :-)

I may be reading subtext where there is none. If meat raises the per capita cost or threatens to diminish the capacity to provide abundant good food that meets the other goals (local, buffet, etc.), perhaps this should be made explicit? Should people be encouraged to be vegetarian or does this one factor not play a big role in the cost of food for the conference?
(And I mean the kind of vegetarianism that appreciates the cheese of a well maintained and happy cow, goat or sheep.)

I appreciate the nature of your question but I don't think our remit is to change peoples' eating habits nor force a particular food on any of us (that goes all ways by the way). I think our remit is to find out what people want to eat and see if we can accomodate the common ground. Hence the importance of filling out the wiki with your suggestions in terms of detailed food descriptions.
That said I think it's always fun to invite people to try new things. So, suggesting people try some interesting vegetarian dishes as an experiment would be the way to go I reckon.

I 100% did not mean to present the idea for changing people. I just wondered if there were unstated issues about the cost of meat. Drupalcon is an open source conference, so there's a more transparent connection between what I pay and the total cost of the conference. I don't know what meat costs in France, but I suspect good meat is pricey like in the U.K. and Ireland.
When I visit France, I go to the market and buy the kinds of things that are already on the wiki page, so people have already found the frontiers of my luncheon imagination!

Yes, you are most likely right: good meat is pricey. I'm not sure what we can do about that. My personal preference is to eat organic/wild meat/fish but that would surely be expensive. I reckon there is a limit to how "good" we can be given the restrictions that will most likely come from our budget and the caterers.

I wholeheartedly disagree
I wholeheartedly disagree that suggesting to anyone what they should eat when they are paying a good price for a conference is acceptable. We're not here to impose our dietary ideas and beliefs on anyone. My roommate is a vegetarian but the other two people coming from our group are good old fashioned omnivores and expect to not have to try "interesting vegetarian dishes," certainly not at the price we are paying.
If the food choices need to be balanced with respect to their food requirements, so why not make a simple poll on the DrupalCon Paris site asking people to select whether they eat meat, are vegetarian, require kosher food, and whatever the other most commons dietary options are?

don't forget that most vegetarians like protein (and flavor)
i expect the Drupalcon crew will do better (the options on the wiki page sound delicious) but sometimes event organizers provide a fairly thoughtless "vegetarian option"
for ovo-lacto-vegetarians protein is soy, legumes+grains, dairy, eggs
personally i eat a little fish and fowl, so if there are "prepared sets" i would like to see the menu when deciding whether to choose a vegetarian option
