The following recipe has been in use for about two years with pretty good success. You can see it at RegattaLog.com
1. Install Drupal (this applies to v6). You'll want to include the image, date, calendar, and views modules at a minimum.
2. Install Ubercart
3. Choose a pretty theme. I am using Aquia Prosper.
4. Within Ubercart, enable a payment method and test it.
5. Enable the following within Ubercart: Attribute, Catalog, Payment, Reports, and my own module WHo Bought What.
6. Create the attributes you may need for an entry. Here is my complete list. I think most are self-explanatory

7. I found that Having a skipper first and last name field separate is important, or else your entry lists look silly.
The discount field is there since entry fees change over time.
8. Create a product class with the default attributes most likely needed. Here are the attributes I use:

Sail Number
boat_type
Rating
Skipper Name
Your Yacht Club
Waiver of Liability
Your Signature
Cell Phone
9. Because I like online waivers, the text of each entry includes a liability release. The waiver attribute is a mandatory check box, and the signature is for the name.
10 Create your regatta/race, adjust the attributes as needed, and publish.
11. You may tweak the catalog, replace it with a View, or with a fixed page. Your call.
12. Use Who Bought What to create rosters of racers.
