Greetings.
I am working on a project wherein there will be TONS of cck fields. I am dreading scrolling through that massive list to build the many views needed. Is there some secret, backroom extension that can better manage that Content fields list in Views? Or suggestion about formatting the list -- perhaps to add more space inbetween items for easier reading?

The alternative is to use
The alternative is to use build modes and create alternative node templates based upon the build modes and lay everything out via templates and not use fields. This can be very effective in cases like this (which are pretty unusual cases).
Adding more space between items seems like a simple CSS issue.
display suite
Have a look at display suite (http://drupal.org/project/ds) and node display (http://drupal.org/project/nd), it allows you to define build modes. Inside views you only have to select which build mode you want to use.
