If you haven't checked it out yet, be sure to check out Lullabot's new Form Builder - this looks to be the future for creating forms and content types in Drupal. The drag-and-drop goodness of it all is just part of its awesomeness - the underlying API holds the real power that will allow it to work together with any module that does anything with forms.
Awesome stuff, I'm still trying to wrap my head around all the possibilities - if I were a betting man, I would put money on this being part of Drupal 7 (despite the fact that it is brand new), seeing how it will make many parts of Drupal's admin area much more user-friendly.
Be sure to check out the demo and you'll understand why I'm so amped about this.
