I doubt you will find anything so specific, documentation for the 3.0 Omega theme is fairly thin on the ground.
Are you new to PHP & MySQL? How about HTML5 & CSS?
Undertaking a theme design is fairly complex in Drupal due the the interaction between what content types / site structure you need to custom build & the way you control their styling. Omega is a little tricky since it is a responsive design.
You will need to read up on Drupal's theming system http://drupal.org/documentation/theme & check Omega's documentation.
Search around & see some video that demonstrate the additional modules that can make Omega theming easier

I agree you will probably not find any specific design comp to Drupal theme tutorials whether omega based or otherwise. We've worked quite hard to get docs together for Omega and are continuing to develop them. The official documentation handbook is here: http://drupal.org/node/819164. These docs will not address your specific request but will give you a clear view of what Omega can and cannot do.

There is also http://buildamodule.com/ which is a huge resource for more under the hood kind of stuff.
