I have been able, upon occassion, to find a list of views that are associated with a menu items, but one which are not currently used. Any of them can be assigned to a menu via a simple dropdown. But, amazingly, now I cannot find a way to view these used menu items to put them in a menu. How did I ever get there before??? Where did they go???

menu items
you may be referring to the navigation menu or admin menu -- those include all of the menu items that you possibly don't want your end users to view - menus are found under the buildings tab in the admin menu - or as you create a page, you can give it a menu name and designate if you want it on the main menu or under another menu tab.

I don't think we're understanding enough of your problem.
Menu items need to be associated with one of the following:
- A node ID
- A URL
- A URL alias
Only a Views 'page' display has a URL. Other display types (block, attachment, etc.) cannot be assigned to a menu. In the settings for the 'page' display, you can assign each individual 'page' a menu item using combo-box lists like you described.

Objective
I'm not aware of anything in core Menus, Views, or Chaos Tools displays a list like this. I suppose there could have been a module which did it, but I've never heard of anything like that.
So, we know that the main Views page shows all views (even disabled ones) and what display types each one has (page, block, etc). And we know that the Menu settings can be controlled from each individual View display, in the Page Settings section. And we know that the core Menu administration interface allows you to re-arrange items or add new ones. But what are you trying to accomplish with a list like you're asking for? It seems like everything you need to control the menu items is available through these other means.
