I know this group is pretty dead, but I figured I would give this a shot. I've recently taken it upon myself to ditch webform and try to understand entityform and all one can do with it.
To that end, I've been working on a project that requires emails to be sent when an entityform submission is edited. I've used Rules some over the years for basic stuff but feel like I've gone from the kiddie pool to the middle of the ocean once I installed and took a look at Entity Rules. I will gladly buy someone lunch if you can help talk me through it some and be open to attempting to answer some questions involved in my use case.

I haven't worked with entityform or entity rules - but I was curious to know if got your questions answers? If you did then at least I will know who to contact when I run into issues with entityform ;-)
Figured it out
It took about another week for me to finally figure out what gaps I had in my knowledge. Most of my confusion revolved around determining the various places where rules/settings are located and can be altered.
I've done a few entityforms now and am confident enough to try to help others. Definitely not a master, yet.
