I am looking at spending some time in Baden-Württemberg early next year, and would like some advice on how to find any contracting work whilst there, or accommodation advice ( I am bringing my family of wife and 5 children ), or even advice good family activities in the area!

Not as an employee, but if I am contracting through my company in NZ, then it makes no difference where I actually am? Or does it? Because technically any firm I contracted to would be paying an invoice, rather than employing me, meaning they don't need to worry about taxes either.

You might want to check into it
My basic understanding is that if the work is being performed in Germany you will need the proper work permit.
From a business perspective, yes, the company you contract with could probably pay to NZ, and then that company would pay any necessary VAT in Germany. But this would probably not be "correct".
Without registering at the citizens office (Bürgerburo) and a residence permit (Aufenthaltstitel) or getting a tax ID number (Steuernummer), you'll likely not be able to rent a long term flat or work "above the table".
If your plans require that you work, you may want to do more research or speak with a tax expert. Searching the toytowngermany website may also have good info.
Depending on your skills, you may be able to find a local company to hire you and sponsor your paperwork. Typically technical web experts can get an Aufenthaltstitel for work. Better if you have a university degree, but possible without one.
