Module proposal
How about a webforms replacement that uses cck content types.
Lots of folks like the webforms module because it is relatively simple to set up and has some convenient administration pages. I hate it since the fields aren't reusable anywhere else (at least not easily) and it can't take advantage of some of the great modules providing additional field types.
Would work something like the following... Declare the content type, go to the cck_webforms admin page and configure it (or choose a checkbox and destination email on the content type creation page). When a node of that type is created an email is sent to the destination email address containing a templated email and the content created is saved.
This would be a relatively simple module, and would save the trouble of creating the rules and views for custom webforms. I definitely think that we could turn it out in a day, and it's the kind of universally useful module that might get some attention.

Unless that's what you're excluding on the basis of indecency. It does support repeating events and the anonymous entry/approval workflow is easily put together by allowing anonymous access to create content of that type and defaulting them to unpublished (and witholding permission to publish to those responsible) Then create a view to manage them. There's a great module called Publish Content (http://drupal.org/project/publishcontent) that integrates with views and gives an AJAX "publish/unpublish" link to allow easy administration.

I've talked with Matthew a bit more about ideas for this, and we both agree that the goal of such an event is for us to get together in a casual environment and learn from each other, while at the same time showcasing Drupal to a larger audience, and to that end he has proposed a sort of happy hour after we're done. This would allow interested folks to come check out what we've done with Drupal, and hopefully show them how awesome it is.
To that end, I propose we work on a couple of things. I think we should get enough of a crowd to work on multiple projects, and one of them could be building a site for ourselves as a group. This has been brought up a couple times, and I think that would be a fun exercise, and we wouldn't have to be worried about being accountable to any outside entity afterward. In addition, I think we could also do some module and/or documentation work.

I fully support using git as well. :) The more people touching the code, the more you need git I think. Also, Drupal is moving to git, so we might as well be up to speed.
I do what Linus tells me to. That is, if I can figure it out.
The way I figure it, if Linus uses it, who am I to cut against that grain?

I'm interested in learning more about using Version Control when doing site design. As far as Drupal specifics, I'm interested in the internationalization/localization options, so you can support sites in other languages. I'm specifically interested in the CJKV languages.
But mostly I'm going to be saying, "What's that?!?" or "How do you /did you do that?!?" a lot. Maybe by tomorrow I'll actually HAVE something on my practice Drupal site!
