Commerce Kickstart 2

Hi there
I've just joined the South West England group as I live and work in Devon and have been running Drupal websites for 8 years.
I want to extend my knowledge by building an eCommerce site for the charity I work for and have installed Commerce Kickstart 2.
There's little documentation or online tutorials - what there is, it's mainly for previous version or for Drupal Commerce.
Has anyone got a Commerce Kickstart website up and running and created different product types/variations?
