Excellent-- thanks for setting this up. Too early to confirm with certainty, but I plan to be there.
You can check out my profile for some of my past work, none of which strongly resembles Drupal default themes.
Currently, I'm working my way through piecing together dev.thebrazoscenter.com (purposefully not href'd, pls keep it that way).
Although theming is a major part of any site I've worked on, I have stuck mainly to image, css, and only the most basic templating (based on Views Theme Wizard output).

We may have a projector but...
Jim has offered to lend us a projector for the presentation, but we would still need a screen. Anybody out there have a portable projection screen they could bring or know somebody we could borrow it from for the evening?
Otherwise, we're looking at spending about $25 to rent one. In that case, it would be cool if some Drupalers could pitch in for the modest cost.

I'm no theming expert
I'm no theming expert, but I can tell you a couple of things that have helped me to begin understanding theming. First, there is a free sample chapter from the "Pro Drupal Development" book that just happens to be the chapter on theming. The chapter stands on its own; you don't need to have read the rest of the book to understand it. It starts off simple and progresses into the more technical aspects.
To practice, you can try adapting one of the free designs from somewhere like Open Source Web Design or Open Web Design into a Drupal theme. For a first try, you'll probably want to pick one of the simpler, more Drupal-like themes. At least a few of the free Drupal themes got there start this way.

You might want to check out http://drupal.org/project/Themes, http://drupal.org/node/509, and http://drupalsites.net to get a feel of what's possible in terms of theming.

Todd- thanks for the excellent live demo on basic concepts of theming in Drupal. You also generated some good css discussion in the group (great crowd, eh! Four Kitchens is going to have to expand soon! ;) ), and I wanted to ask you to elaborate just a little on your magical three-even-height columns (where they all hit the footer together, regardless of what's going on in each of them).
Specifically, I'd like for my left column to hit the footer here:
