I have a customer site with Drupal/Ubercart and have a question about configuring shipping quotes.
Currently, we have several shipping quote methods configured (several UPS options, and USPS Envelope and USPS Parcel) options and my customer has set the appropriate shipping information on each product. Unfortunately, we are seeing occasional mistakes in the quote calculations resulting in the site having to eat larger shipping charges than were charged to the end customer. From what I can tell, this is mostly due to the shipping quotes not properly accounting for the dimensions of the products going into a shipping box. :-(
At this point, my customer would like to switch the shipping configs to provide just one "Shipping and Handling" charge to the end user, but I'm having problems figuring out the best way to configure Ubercart to do this. Nor have I found any obvious clues in the ubercart.org forums.
Anyone have experience setting up Ubercart to handle a wide variety of products (bumer stickers to t-shirts to goblets to large dragon figurines) with a single "shipping and handling" system?

Is the client wanting just one rate for everything? Flat rate is one of the modules to enable in Ubercart - fulfillment (admin/build/modules/list). Then assign a rate at admin/store/settings/quotes/methods.
I don't think they want to
I don't think they want to assign just a flat rate shipping charge to everything. That would't make much sense with their wide range of products (bumper stickers to wood or silver goblets to drinking horns to large dragon figures). And very soon we will be adding mead to the website as I've just figured out how to handle age and deliverable zone restrictions to Ubercart.
Perhaps the weight based shipping quote method would work....

You'll get much better help on any Ubercart issue by posting an inquiry on their forums (after thoroughly searching to make sure there isn't a thread that already relates to your issue). Also, you might want to jump on IRC and join the chat room #drupal-ubercart to see if you can find some support there.
shipping zones
You say this but there is not any instruction setup walk trhoughs for the multitude of available solutions, all of which claim to be working on live sites!
shipping zones when CA's can not be used with this but more importantly they cannot be used with flat rate, just being able to select a shipping zone in flat rates CA's would be a problem solver.
