I have a three language site. One lang is Chinese. In previous non-drupal versions of the site the chinese characters had to be converted to unicode to ensure proper display. I see that I can enter copied and pasted chinese directly into drupal. Does it display reliably or should I keep converting to unicode?

I think you could paste the text in a text editor first, let's say notepad++, then convert it to utf-8. If that doesn't work, please reply.
UTF-8 default encoding
Drupal uses UTF-8 as default encoding so entering Chinese characters should be no problem (see http://drupal.org/node/8408).
