I'm in the process of getting things ready to set up OG on my new Drupal installation; pretty much every module is active instead of something called 'Views'. My main issue is that there are several modules with that in the title so I do not know which one to use.

It is a very powerful module & OG can't do much without it. It is quite complex, however, and if you've never had to use SQL you might find it difficult to understand & get what you want out of it.
On the other hand, you may find the preconfigured views that come with OG are enough anyway.
Once you master views you unleash the full power of Drupal.

Unable to find Views in the Structure Area
I'm currently on the 'Organic Group Views' video from the Modules Unraveled series, but have come up against a block on the process. I have enabled all the modules, as far as I can tell, but cannot find 'Views' in the menu as listed on /admin/structure page of my site. I cannot really go any further in the process, at this time. Does anyone know how to activate the Views link in the Structure menu?

Without enabling Views UI
Without enabling Views UI module you don't see the Views link in admin/structure.
It had already been enabled.
It had already been enabled. I disabled then re-enabled it again. It is still not showing up. I am therefore currently stuck, for I do not know how to get the Views menu option to appear on the list.
