I am a total newb at this so excuse me if is a stupid question. I have created the sub menus under Organizations called Businesses and Residential. But what I want to be able to do is be able to create a new organization under one of the sub menus. That way when I select the sub menu Businesses I only see a list of business clients and when I select Residential I only see residential clients.

When I understand you correct. You want two separate lists for organizations? One which shows customers and one which shows providers.
You could do this with views. Create a view which gets the organization and then set the filter for customers and provider.
