Adding a menu widget to all document pages / child pages

Can I add a menu widget to all document pages automatically or do I have add it manually for each page?

If you edit the panelizer for the content type, you can set it.

Go to admin/structure/types/manage/your_content_type/panelizer/page_manager/content

Section and Space templates can be found here:
admin/openatrium/section-templates
admin/openatrium/space-templates

You'll be overriding the default OA behaviour, so you'll probably need to use features if you want to keep those changes when you update OA.
