OK, I must be losing my mind. Tried posting this twice before and it's gone nowhere? On top of that, I know (or at least believe) there is a way to limit the list of content types that certain roles see when they select "Create Content". Anybody care to remind me where/how that is done?
I searched through my permissions matrix and came away empty. That may be, in part, due to the fact that I recently implemented both the "Better Permissions" and "Filter Permissions" modules. FYI... I think these are GREAT additions to any Drupal site. They are simple but really helpful when trying to tame a monster permissions matrix like mine.

In /admin/user/permissions
In /admin/user/permissions under the node module sub category you can turn on and off permission to create/edit/delete your different content types by user roll.
if...
I think you can only disable create/edit/delete if the "administer nodes" option is not checked.
