Signup is not (yet) extensible. I believe future plans are to create arbitrary fields, but it doesn't do that today.
My suggestion is that we can actually create a poll and/or put in entries for the suggested topics and see how sign ups go. We did that for OS CMS and seemed to work OK -- if we do it earlier, we should be able to adjust.
I suppose that we could also create multiple concurrent events like:
Drupal Camp Seattle Advanced (for people with some drupal experience)
Drupal Camp Seattle Newbie Tech: For people with php and css experience but no drupal experience
Drupal Camp Seattle Power User: for people interested in knowing what drupal can do, but have no specific technical expertise (IE not for developers)
Yeah, I ran what was essentially a "user" track -- people not developing but needing to understand what Drupal can do. Let's get people signed up on this node and/or subscribing to the group. I screwed up and turned up signup for the group node as well as the event, and you can't un-signup-enable something. Oh well, we'll have a big list of people and we can email them once we have a certain amount signed up and go from there.
I'm trying to clear my calendar to come. I think I represent an emerging group - people who need to know when to suggest Drupal to others and who to point them to do work. We need to know enough to be an interface in the design and deployment process, but have no desire to become programmers. :-)
The non programmer (user) track stuff will give anyone who is wondering what drupal can do, or how to solve a problem with drupal a good idea of those things.
so you should come, you'll learn alot and you will have a good idea of what you can do with drupal and when you should suggest it.

I'm also looking for pointers to great Drupal sites to show people. Sort of a tour to show them a range of possibility. Had anyone put something like that together?
I believe I read somewhere about having the events.module allow the creation of an event with concurrent tracks. Does anyone know if the events.module currently allows that or, if not yet allowed, if that is still the plan?
Wouldn't one event with concurrent tracks be preferred over creating multiple concurrent events?

We did this the exact same way for OSCMS Summit in Vancouver. And no, you want a separate event for every session -- i.e. one node per session. Then you can have separate signups for each one, categorize each one separately, have each one owned by the session leader, etc. etc.
Is everybody gonna wanna sign up for the various sessions listed? I've noticed that there aren't any comments listed for them, and it seems like this would make sense, given that we're down to just a little more than a week. Or is there an alternate location for this that I'm missing?
The session list is organized here, and there are people using the "signup" function for each one (from half a dozen to two dozen sign ups per session, which is a good number).
Feel free to post comments about the questions as well, or clarify what you're asking.
