OK, I'm trying out Colloquy for now. Doesn't look like it has been updated in over a year, nearly 18 months now, only concerned about it going unsupported. But seems to work well. I'm in #drupal-support as stuartEngelhardt.
Thanks for the help, Kojo, Katherine and neclimdul :)
Stuart-
Thanks for starting this thread. I've been meaning to give IRC another shot, and just yesterday (!) was catching up with podcasts:
The L.A. Drupal podcast discussed these clients and gave a little more bg on how to use IRC for Drupal work.
Now checking out Colloquy as well.. Wow this brings back memories of a misspent youth!
I've tried all of them. I use LimeChat on my laptop and iPhone. It's not the best looking UI but it's clean.
The most important thing i'd suggest is to try one and just stick with it. It's painful to have to reset all your IRC servers and channels every time you switch...

Limechat
I haven't used a mac in a while but my favorite was Limechat. I've also used Colloquy but I didn't need all the fluff. Its a good program too though.
I use pidgin
I use pidgin (http://pidgin.im/). IRC can be useful for support, but just make sure you are in the support channel.

oops, I thought there was a version of pidgin for MacOS. I like Adium for Mac though.
Colloquy
I use Colloquy for IRC. I used Pidgin on Windows, but oddly, Adium (the OS X port of Pidgin) does NOT have IRC support.
But I like Colloquy fairly well.
ah, it's only the newest beta
ah, it's only the newest beta of Adium that supports IRC. Weird.
Oh! So at least IRC support
Oh! So at least IRC support HAS been added! That's good to know. I'd prefer to not be forced to use multiple clients for IM and IRC.
Although...I RARELY IM anymore.

My irc habits are different
My irc habits are different enough that I like to have a seperate IRC client. That said my prefered client is irssi so I'm a little weird.
LA Drupal podcast discussed IRC just recently

ps= colloqy is good too!
Adium
I'm relatively new to IRC, but I really like Adium. The current version supports IRC, so you no longer have to use BETA.
