Over in our MeetUp.com discussion board some one asked the following question:
"Is there a D7 commerce book that isn't Ubertcart? How can I learn about D7 Commerce?

Here's the answer I provided; posted here to be available to a larger audience.

Chapter 9 of Lullabots "USING DRUPAL" 2nd edition is entitled "ONLINE STORE."
This chapter covers the details of building a D7 store for a fictitious company named Sweet Tees. The step by step process explains every configuration setting needed to get the job done. It is truly helpful in wrapping your mind around the process. In addition to using the Drupal Commerce module, it also weaves in a use-case for FEEDS and RULES. With FEEDS they show you how to take a CSV file and import your products rather than entering them all by hand. With RULES you are shown how to apply a TAX to orders based on where the order is coming from.
You'll have to agree that the USING DRUPAL 2nd edition is worth the price pf purchase for this chapter alone, not to mention the 6 other site projects they walk you through; including media-management and multilingual-sites.

Another option....
Consider the videos From Drupal Commerce founder Ryan Szrama, himself. He has quite a few videos on Lullabot's http://drupalize.me video subscription service. You can buy a month to month subscription OR buy a year at a time. It's also worth noting that a subscription is included in an annual purchase of the Acquia Support Subscription at http://acquia.com which also comes with a support forum accompanied by 24hour service level agreement to respond to your questions. Other benefits include their hosted solution for Apache Solr Search, an SEO Grader, BLITZ [which is a a self-service load and performance and scalability testing platform that analyzes your site for SPEED improvement recommendations], Insight [which looks at your site's code and configuration and gives general reports and recommendations], LingoTech [which connects your site to the LingoTech service and allows you to have some one else create the proper translations for your pages.]
There are more benefits so check out https://www.acquia.com/acquia-network-subscriptions for more info.

If you don't want to spend the money on the book OR the videos, then you go go to http://drupal.org/project/commerce_kickstart for free and download the Commerce KickStart and find a Drupal 7 installation profile that comes with Drupal Commerce completely pre-configured with example products and more.

There you have three excellant options before you. Let us know which route you take and how your progress goes!
