Someone just mentioned http://www.cherokee-project.com/ to me and I was wondering if anyone had any experience relating to Drupal with it.

Many web servers out there
There are many web servers out there.
Just to mention a few with names inspired from American Indian tribes/people:
Comanche (Seems defunct now).
Hiawatha
And there are many more that fit in the light weight category.
As with any open source project, what you should look for is the community around it: is it a one man show? Are they responsive? Is it evolving in a healthy direction.
In order to run Drupal you need FastCGI support. The ones that do that besides Apache are lighttpd and nginx, with the latter having a lot of momentum. Some do not use them for PHP at all, but to server static files fast.
According to Netcarft, only ngnix shows up with a chunk along the big guys (and the in-house ones such as Google and qq).
