I know of this Drupal worker-coop - they are not exlusively Drupal, there is also Chicago Tech Coop, but not sure if they still run

In addition to Quilted as mentioned (which helped produce the great guide linked to), i personally am in Agaric collective and there's also Koumbit in Canada and Palante Tech in NYC who recently incorporated formally as a worker coop.
