SVN
I've been using SVN at work and it is great. Never used CSV but same thing without as many options I hear. I'd be up for seeing it in action.
Mac Only Subversion Tool - Sorry PC
I recently found a fairly decent Subversion tool called Versions (http://www.versionsapp.com/). I only have the trial version, but I have been able to create local subversion repositories, and connect to my unfuddle.com repository. The trial lasts for 21 days.
CVS is available on MACs
Eric CVS is already installed on MAC and is free...might be worth looking into.
