I am thinking of arriving a few days early and spending some time shredding the trails. Mt. Hood has an amazing freeride park and bike and gear rental are available on site.
If you've never tried downhill but are comfortable on a XC MTB, this is one of the best places to try it as it's not as gnarly as trails in CO and UT. It's very fast and has a few skill sections but nothing outrageous. I am an advanced rider and would be willing to coach you down the mountain in one piece.

Just to be clear, I plan on doing downhill/freeride, not cross-country. You do not want to be clipped in for this as you would want to put your foot down quite often. The best footwear for this is high ankle hiking boot as it provides adequate ankle support and traction. These can be had at Target for about $45.

One of the local favorites
One of the local favorites for MTB rental is Fat Tire Farm, in NW downtown PDX near Forest Park.
Also, the Sandy Ridge trail is on the way out to Mt Hood, and it's fast and flowy. I had a good time riding it on my rigid single-speed 29er, and there are downhill sections for anyone with full suspension and appetite for gravity.
