The Photo Gallery needs multiple upload capability.
If you have even 6 or 7 photos, it becomes tedious to upload on or two.
If you have 100, it's undoable.

Consider working alternatives available now: Media module
Yes I agree - unworkable - fortunately, the Drupal Media module provides functionality for an excellent, robust multiple image uploader.
You would need to check if Drupal Media module is now part of or is going to be included into the OpenPublish Drupal 7 distro - if you definitely want to base your site on OpenPublish.
Drupal Media module does not depend on OpenPublish - you can use it with Drupal 7 core. So an alternative to OpenPublish, you might want to consider building your own solution from Drupal 7 core + contrib modules like Media - see more detail about this and other modules available now, here:

For easier styling and layouts you might want to consider sweaver and livethemer modules.
