Any guidance on when to use which version?

32 bit vs 64 bit

The short answer is this: if you don't know what version you want, pick the 32-bit. It's mush less expensive to run (small instance versus large instance) and will handle most sites. When you start pushing the limits of the 32-bit server, then it's time for the 64-bit.
