I'm interested in knowing what the impressions are of people who have had experience with both webforms and entityforms. I'm working on an internal project that has been gnawing at the edges of webforms for quite a while, and I'd like to know if entityforms would be a good replacement.
The latest problem has been that we need to update existing nodes depending on other recently changed nodes. I know this sounds like a rules application, but rules and webforms don't seem "made for one another". I'm wondering if entityforms are actually more flexible and worth the work to move to them.

It depends.
They have different use cases, and Webform is definitely a more polished solution if you don't need to either use regular fields or integrate with other normal entity things. In short, if you want something simple just go with Webform.
