I was already using Node Reference with my article content type to reference images and a gallery type. Since you guys have included node references as a part of 1.7 (and did it better), I want to delete mine, but with this new interface, I don't know how?

Go here admin/content/node-type/article/fields and remove the node reference fields in the article content type, for example, that you don't want.

deleting a node reference
The admin theme is a little confusing until you get used to it.
To administer content types and modify your fields:
Click on Content in the upper left and then Content types in the menu that appears under it.
You should then see the list of content types and you can select manage fields for the type you'd like to edit, in this case, the article. Find your field and select remove. You will be asked to confirm and that should be all there is to it. Remember that when you do this, the relationships that you have set up for will no longer be there, if you have not set them up using the new field yet.
Tip: When you are looking for admin options in the new admin interface, is to select the VIEW ALL link on the right side of the menu. If you are looking for an option or configuration option that seems to be hidden from view, this link will usually shed some light on the area.
