I changed the "Topics" vocabularies so I could have the topics I want, but they have not changed and the default navigation is still showing.

Keep in mind that the menus
Keep in mind that the menus are placeholders and must be changed manually.
I also once thought that changing the topics would change the menu links.
So, edit the menu links to match your new vocabularies. I'm sure your vocabularies actually did change and you may be assuming they did not because the menus didn't change as well. Clarify?

I'm really sorry if I am asking stupid questions but I am new to drupal, and I am not sure where to change things. Is there an option where I can change the menu the user sees?
Could I hire someone to customise the site for me?

Menus and the vocabulary are separate. You can link menu items to articles views filtered by vocabulary terms, but changing vocabulary terms is not directly related to changing menu items. This is done for greater flexibility. You would not want your menu items to be limited to just articles views filtered by some terms.

This is great, thats for that link but I still do not understand how when I click on the "topics" the feed for those topics will come up as part of that "topic"
