I'm looking for suggestions on what might be the best Drupal profile for a news site. I'd like something between the complexity of OpenPress and the simplicity of ProsePoint. Any contenders?

If you have SSH, then yes.
NodeStream requires Drush, so if your shared host allows SSH access to your account, then you can install NodeStream. Most shared hosts enable SSH upon request. If yours does not, you should really consider switching to another host!

What do you mean, bargle? Regardless, you should get a host with SSH. Considering all the file transfers/updates/whatnots that will be going on...I wouldn't go with a non-ssh host. And you might want an SSL if you're doing any commerce, though we've got ours running on logins, user/* (iirc), that whole schmear.
tl;dr - shouldn't. You can introduce a ton of unknowns and problems without SSH. Reading your settings.php file in plaintext? Ooooh...
