I'm intending to build a commerce site using Drupal 7 and wanted to see if Drupal Commerce could provide these options?
Can users choose various shipping options (overnight, two day, ground, etc...)?
Can different freight charges be incorporated for different shipping zones (West Coast, Mid-West, East Coast, etc...)?
Finally, can it generate packing slips, invoices and sales summary reports?

Ask your questions in the Commerce forum yet?
It's been 10 days and no reply for you. I do not know any LA member who has used D7 Commerce module. It's been mentioned several times, but nothing in depth. I'm thinking you ought to ask this question of the Commerce developers, in their discussion, where Commerce experts abound.
If you have an immediate business need, then my lay advice is to use D6, as D7 Commerce may not be ready for prime time, yet. If you find out, then please post here, as I would like to know the answers to your questions as well. I'd like to use D7 Commerce sooner, not later.

At least you replied... I'm glad someone responded, even if only to tell me that I am not alone.
Yeah, I still do not have an answer to some of what I asked and so have moved on to using Ubercart for Drupal 7.
I will post anything I learn to this group. Hopefully, my struggles will not be in vain.
